Infusion: Tending burgundy red Ingredients: Luxury black tea Information: Pu’erh is processed unlike black tea .This tea is picked, processed and partially fired allowing the leaves to retain moisture. The moist tea is then piled and has a reaction similar to that of a compost pile. The tea is then aged, in special underground rooms or caves, adding to its unique character. These aged teas are prized and like wine. Mini Toucha, like all Pu-erh teas age exceptionally well – in China it is not that uncommon to find processed tea in local Yunnan tea shops that has been aged for 25 years or more! When infused the tea has a mild musty character that to connoisseurs is immediately identifiable as Yunnan Pu-erh. To the initiated this character can be surprising and remind one of the smells of fresh earth. It is also because of this character that the tea is known in some parts of China as “Earth tea.” The mini-Toucha can be infused multiple times. Boiling water poured over the tea causes them to undo, infusing with rich, bold liquor. The cup produced is tremendous – dark, with deep notes of wine and subtle earth, full body and medium-long finish. Best enjoyed in the company of someone special. Hot tea brewing method: Use 1 ball per pot of 16 OZ. Bring freshly drawn cold water to a rolling boil. Infuse heart and let steep for 3-5 minutes according to taste, (the longer the steeping the stronger the tea). Drink straight up.It can be infused multiple times Iced tea-brewing method: (to make 1 liter/quart): Place 6 tea balls into a teapot or heat resistant pitcher. Pour 1 1/4 cups of freshly boiled water over the tea. Steep for 5 minutes. Quarter-fill a serving pitcher with cold water. Pour the tea into your serving pitcher straining the leaves. Add ice and top-up the pitcher with cold water. Garnish and sweeten to taste.
