Description: From Junshan Island in the Hunan Province of China, this beautiful Jun Shan Yin Zhen yellow tea boasts very beautiful sage downy green and silvery buds. The dry aroma is melon and maybe a little muscatel. Cup is creamy, light and really looks like a nice Silver Needle, however, the cup also offers hints of toastiness and a soft muscat grape-like fruitiness. Very complex and layered. Just lovely. Jun Shan Yin Zhen, a yellow tea made from the delicate fuzzy buds of Hunan grown tea, on first glance could be mistaken for an aged white tea. From the complex and savory aroma it quickly becomes apparent that it is a yellow tea, with notes of hay, corn and dried tomatoes. Yellow tea is a very unique style of tea that is a cross between a green and white tea. It has the best attributes of both sides and so enjoyable to drink. From the green tea side it gets its sweetness and tropical fruit taste and from the white side it gets a delicate yet pronounced taste. Steep tea leaves in hot water at 80°c (176°F) to 90°c (196°F) for 1 minute for the first and second brewing. Gradually increase steeping time and temperature for subsequent brewing. You can also drop 3-4 buds into a tempered glass and slowly sip it. You can watch the buds dance up and down in the glass.
