Also known as Pi Lo Chun, it is renowned for its delicate appearance, fruity taste, floral aroma, showy white hairs and early cropping. The name Biluochun literally means “Green Snail Spring”. It is called so because it is a green tea that is rolled into a tight spiral, resembling snail meat, and is cropped early spring. Chinese tea experts regard it very highly. It is so delicate and tender that one kilogram of Dong Ting Bi Luo Chun has 14,000 to 15,000 tea shoots. How to Brew Suzhou Biluochun Green Tea: 1. Rinse tea cup and teapot with hot water. 2. Use about 3.5 – 7 grams of tea leaves (2-3.5 teaspoons) for every 225 ml of water. 3. Steep tea leaves in hot water at 70.C (158.F) to 80.C (176.F) for 1 minute for the first and second brewing. 4. Gradually increase steeping time and temperature for subsequent brewing. 5. Refill when glass is still 1/3 full.
